Introduction to cheese
Cheese is made from milk, rich in protein and lipids, and its milk source includes domestic cattle, buffalo, domestic goats or sheep. Rennet is usually added to the production process to cause the casein to coagulate,acidify the milk, and then separate and press the solid into the finished product.
Most cheeses are milky white to golden brown and are rich in protein, fat, calcium, phosphorus, vitamin A, vitamin B12 and so on. Modern low-fat cheeses made from skim milk are also available.
Cheese is also the traditional food of the Mongolian,Kazakh and other nomadic peoples in northwest China, called milk tofu in Inner Mongolia, commonly known as milk cake in Xinjiang, completely dry cheese is also called milk lump.
Classification of cheese

1. Milk collection system
Milk collection system is composed of filter,flow meter (pound milk tank), heat exchanger, pre-degassing machine and other equipment, mainly for raw milk measurement (weighing), cooling, initial filtration, degassing and other processing.
2. Milk storage equipment
Milk silos are stainless steel containers used for outdoor storage of fresh milk at low temperature. Through the thermal insulation structure of the inner wall of the warehouse and the outer shell and the intermittent stirring of the high-speed propelled agitator in the tank, the low-temperature fresh milk entering the warehouse (≤5 ° C) is stored for 24 hours, and the temperature rise does not exceed 2 ° C, and the fat does not float. It is widely used in farms and dairies to store fresh milk.
3.milk standardization system
The standardized equipment mainly consists of
preheating system, cream separator (clean milk
machine), high shear emulsion tank, homogenizer,pasteurization machine and other equipment.
Main workflow:
1. Preheating: the preheating temperature is about 50 ºC-55ºC .
2. Clean milk: Remove impurities from milk.
3. Cream separation: the separation of fat beyond the standard requirements.
4. Add dry matter or concentrate: If the whole milk solids are below the standard, dry matter should be added or concentrated. The whole milk solids of pure milk shall comply with the provisions of the "Quality Standards for Semi-finished products of Pure Milk".
5. Pasteurization: The sterilization conditions are required to be 80ºC-90ºC for 15 seconds.
6. Cooling: The milk is cooled to 1-8ºC with ice water through the heat exchanger.
